I've gone and done it now!

So Dawn... where have you been?  Well this past year has proven to be a long story.  The truth and nothing but the truth?  Shortly after I started my Paleo journey I became pregnant.  That unfortunately ended in a miscarriage.  SO, I started over and guess what... as soon as my body became healthy again I became pregnant again, but again I lost the pregnancy.  The doctors truly don't know why, but I have since been diagnosed with PCOS.  This explains why when I cut out sugar and carbs I quickly loose weight and become pregnant.  It doesn't explain all the miscarriages, but I am under a specialist now and my husband and I are very hopeful for a happy and healthy baby in 2014.  I was asked to eat regular with no special diets for a few months so that my doctors could watch how my body reacted to insulin so that they could see if the medicine they have me on to hopefully stabilize a pregnancy is actually working.  Now that my doctor has given me the all clear and everything is stabilized again I am switching my diet back to Paleo and I'm super excited.  The better news is that my husband is actually joining me this time too so we are going to eliminate gluten and sugar from our entire house hold.  We are going to become a real food, primal family and that is super exciting. 
 

My favorite dish of all time is chicken Pad Thai from a little restaurant in Roswell, GA.  I don't get to go there often any more because its a little drive from where I live, but tonight I think I've actually out done myself.  I have tried several Pad Thai recipes and tonight I pieced several of them together to finally out do my favorite Thai restaurant.

Now I know that rice is on the line of not being Paleo, but I figured for my favorite dish its acceptable.... No gluten in this dish and I used farm fresh eggs and chicken for the protein and doubled up.  I think I'm probably on the safe side....

I didn't take step by step pics of this dish because I had NO idea it was going to come out as good as it did.  I will come back and add them next time to help you guys along if need be.  Or just message me with questions.

Dawn's Chicken Pad Thai

8 ounces dried, wide and flat rice noodles (You can find these at Publix)
4 Tablespoons Brown Sugar
Juice and Zest of Two Limes
6 TBSP Soy Sauce or alternative substitute
1 dash of Sriracha or as much as you want for heat (its yummy!)
1 tsp good fish sauce
2 TBSP Coconut Oil
6 Scallions (green Onions) chopped with green and white parts separated
2 Tbsp minced garlic (more or less to taste)
2 Large eggs
1 1/2 cups finely chopped chicken (I roasted a breast in the oven with garlic, salt and pepper)
1 TBSP Natural Peanut Butter
1/2 cup fresh cilantro
chopped roasted peanuts
bean sprouts
extra sliced limes

Instructions:
Prepare your rice noodles as directed for stir fry.  Mine suggested just allowing them to sit in hot water for 10 minutes and then allow them to drain well... super easy!

Now prepare the sauce.  Combine brown sugar, lime juice, lime zest, soy sauce, Sriracha and fish sauce in a small bowl and whisk together with a fork until well combined.  Set aside.

Place eggs in a bowl and beat the heck out of them. :)

Place coconut oil in large skillet or wok and heat.  Add the whites of your scallions and garlic and cook for about a minute.  Add the egg and cook until well done and chopped fine.

Add in the chicken right on top of the egg mixture.

Then add your rice noodles on top of the chicken.... now go get your sauce and pour it over your noodles.... Add TBSP of Peanut Butter.  Mix well and stir fry the mixture for 2-3 minutes until heated through..... turn off the heat and throw in the greens from the onions and give the noodles one more toss.

To serve place a heaping pile of Pad Thai with a sprinkle of cilantro on top.  Serve with bean sprouts and chopped peanuts.  Enjoy!
